Two Ingredient Pancake

Pancake, the quintessential breakfast food. Delicious, but for the everyday fit girl, too much flour and sugar to indulge on a regular basis. 

Two Ingredient pancake solves all my needs. Not only is it flour-less but also gluten free and pretty much all protein. They are so easy to make and I get my pancake fix as often as I'd like. Just need egg + banana. Thats it!  I kept this one pretty simple and just added some cinnamon, topped them with some strawberries. Instead of sugary syrup , I opted for homemade  mango/apple puree.

There's much protein in these, sometimes can't decide whether to have them before my workouts or right after.  Check out the recipe below.

Two Ingredient Pancake



  • 1 banana
  • 2 Organic eggs
  • 2 egss
  • Few dashes of cinnamon (optional)
  • Coconut oil 


In a bowl, Peel and mash the banana with a fork. Add the 2 eggs and beat together until the batter . For a more cohesive quicker mix, use a food processor or hand blender. 

Grease your non stick pan with coconut oil and bring to a low-medium heat. Add a silver dollar sized amount of the pancake batter to the pan. Let them cook for about 30-60 seconds, or when the they are bubbled. Flip the pancake and let cook for about 30 seconds. Top with your favorite topping and enjoy!
