Lentils Dahl

If you want me to eat lentils, you have tie me up and force me to swallow...

I know, I know, lentils are so damn good for health, full of dietary fibers and essential nutrients (  phosphorus, iron, copper, it's perfect muscles). But for me the way it looks in my plate is super important and we can't say that lentils are very sexy.

For the first time in my life I decided to cook lentils. I choose coral lentils because they are a bit more appetizing than the green ones .
This recipe comes from Clementine, I just made it a few different and I'm pretty proud of the result!


Lentil Dahl

INGREDIENTS

  • 250g red lentils
  • 1 onion
  • 1 clove garlic
  • 20cl of coconut milk
  • 1 tablespoon of tomato paste
  • 1 small piece of ginger
  • 2 tablespoons of curry powder
  • 1 pinch of saffron
  • 1 cinnamon stick
  • 1 teaspoon of paprika
  • 1 tablespoon of dried coconut
  • Salt
  • A bunch of fresh coriander

DIRECTIONS

Boil salted water, add the lentils and cook them for 10 minutes. Meanwhile, cut the onion, garlic and ginger into smal pieces. Once the lentils are cooked, drain and set aside
In a saucepan, pour olive oil and brown the garlic and the onion at medium heat.
Add the ginger and the tomato paste, you can add a small amount of water
Pour the spices and add the lentils. Mix it for about 5 minutes to blend all the flavors.
Add the coconut milk and the dried coconut.
Cook for 5 more minutes on medium heat and add salt on you convenience.

 

This vegetarian dish is almost enough in itself, but I chose to serve it with some rice . Do not forget to dress the plates with fresh coriander.
