Veggie Quinoa Stir-Fry

These days I have been so hectic I haven't had the time to make my elaborate meals. That doesn't mean I skip out on eating.  I make this red quinoa stir fry whenever I want something hot and quick.  Whenever I know I am having a more intense workout later in my day or quinoa is def a go to.  

Quinoa is gluten-free. It contains a low glycemic index so for those of you who are diabetic this is a great alternative to rice or starchy carbs. Quinoa is also full of proteins, iron, healthy fats and high in fibers.  It will def keep you feeling fuller than rice. 

This recipe is pretty simple and easy to make. I chose to make a veggie stir fry but feel free to make your own version of this.

Veggie Quinoa Stir-Fry


Ingredients

  • 1 cup of broccoli 
  • 2 Garlic Cloves minced
  • 1/2 red pepper sliced 
  • 1 small onion diced
  • 1/3 cup of mushrooms
  • coconut (or olive oil)

Instructions

Cook quinoa in 1 cup of water according to the package instructions. Add oil to a pan and heat over medium heat. Once oil is hot, lower the heat a bit then add onion and garlic and cook for about 3-5 minutes.  Next, add the rest of your veggies and cook for another few minutes ( usually until the broccoli turns bright green).  Once veggies are done add in your cooked quinoa stir and cook for a few minutes . Serve and enjoy!
