Some days you just need to cake it up! Now we aren't opposed to indulging at Menos Mas. I have a crazy sweet tooth but I do invest in quality ingredients that are fresh, unrefined.
Unsweetened Dark Chocolate contains antioxidants, magnesium and it helps combat stress and anxiety. I could also talk about the virtues of the banana, rich in potassium, iron and B vitamins and facilitates digestion. Little changes like using coconut oil to grease your pan over butter (like I do here) are the small choices that make up the Menos Mas lifestyle.
Which brings us to the conclusion that this cake can still provide good nutrients. But be cautious. Our main focus is always about BALANCE. So sure, make the cake, eat the cake, love that cake but don't do it all day everyday.
In this recipe, I replaced milk with a Greek yogurt and it's amazing how soft it makes the cake even the next day.
1 Greek yogurt
3 ripe bananas
1 tsp vanilla extract
100g brown sugar
200 gr flour
120g dark chocolate
1 pinch Salt
1 tsp Baking Soda (lightens the cake during baking)
1 tsp Coconut oil
Preheat oven to 180 °
In a bowl mash the bananas with a fork and mix in the Greek yogurt and eggs.
Pour the vanilla extract and sugar while continuing to mix.
In another bowl, combine flour, baking soda and salt and pour the mixture in the first.
Cut the chocolate into small pieces and add to the preparation.
Grease the pan with coconut oil, pour the mixture and bake for around 55 minutes.
Prick with a knife to check for readiness. When the latter niquel spring, it is ready.
Once baked, let it cool for around 10 minutes before serving
