Peach Summer Salad

Nothing screams summer like a good salad. Salads for most people can be so bland but I think there are so many types and its the perfect way to get creative. There are so many farm fresh and seasonal ingredients you can really play with. Specially when it comes to dressings. No more balsamic here!

Its been way too hot here in Europe to turn on the stove! This one here was an impromptu salad. Hadn't done my groceries yet so just put together a VERY quick (5 minutes to make) and big salad (hunger was real). I really enjoy mixing sweet and savory. So using fresh perfectly ripe peaches were just such a delicious flavor against this very creamy the cashew dressing.

Peach Summer Salad


  • 1 Peach, chopped
  • 3 -4 cups of Loose leaf or Romain hearts, chopped
  • 1 Carrot, shredded
  • 1 Tomato, chopped
  • 1/4-1/2 small red onion, minced
  • 1/4 cucumber, chopped
  • 1 Handful nuts (I used walnuts & Pine nuts) 


  • 1 tbs Cashew Butter
  • 1.5 tbs Olive Oil
  • Juice of 1/2 a Lemon
  • Salt & Pepper


In a small bowl combine the cashew butter, olive oil, lemon juice, salt and pepper. Whisk together until you have a creamy combination. Place the loose leaf, peach, carrot, onion, cucumber, tomato, onion and nuts in a bowl. Drizzle dressing over salad, toss until combined evenly or just serve on the side.
